Ingredients

  • 2 medium ripe tomatoes, finely diced
  • 2 medium radishes, finely diced
  • 3 inches of fresh cucumber, finely diced
  • Handful of fresh coriander (cilantro), finely chopped
  • Handful of finely-chopped spinach or kale
  • Sea salt and freshly-ground pepper to taste
  • Juice of half a lime
  • 1 clove of finely-chopped garlic
  • A couple of dashes of chilli powder and paprika
  • Half an habanero, half a jalapeño, half a serrano chilli, finely chopped

Method

Combine all finely-chopped ingredients in a bowl (or partially blend for a smoother finish) and serve with whatever you like – corn chips, bread, spaghetti…
